Chicken Pineapple Stir Fry

I am always trying to find new things to make for dinner. It gets boring making and eating the same things all the time. Stir fry is incredibly easy. This is a good meal to satisfy a chinese craving and not have to order in.

First you should prep your ingredients. Mix together in a small bowl 1/4 cup soy sauce, 2 tablespoons cornstarch and 1/2 teaspoon ginger. Set that aside for the end.


Cut up your chicken. I used 4 chicken thighes that were boneless skinless, but you can use whatever you have. Cut up one clove of garlic or use pre-minced. Preheat your pan and add 1 tablespoon of oil to it. When oil is hot add your chicken and garlic. Cook until chicken is no longer pink in the center. Stir continuously until that happens.


Add one can of pineapple undrained. Do Not drain your pineapple! You can use whatever kind of pineapple you have. I only had crushed on hand so that is what I used. It would be really good with pineapple chunks, but I didn't have any. Also add about 1 pound of broccoli and one large carrot and one medium sliced onion. I sliced my onion and  didn't have any fresh broccoli or carrots so I used a bad of frozen broccoli, cauliflower and carrots. I heated them up a bit in the microwave just to melt some of the ice in them and drain the water. This prevents too much extra water in my stir fry.


Stir until the vegetables are cooked. Now you add your soy sauce mixture that you made in the beginning. Its better to make it before hand so that you have it when you need it since you should be stirring quite often. Stir in the mixture and the sauce should thicken pretty fast. Cook for a minute or two so the sauce can cook into the vegetables.


Serve over hot rice. I made my rice in the beginning and put a lid on it and set it aside. It was still hot by the time the stir fry was ready. This way I wasn't smelling the yummy stir fry while I was waiting on the rice to cook. Once the stir fry is ready, it smells so good you just want to dig right in!

Apple Banana Spice Bundt Cake with Caramel Glaze

We had a lot of extra bananas that needed to be eaten TODAY! I decided to bake them into a cake. I mixed a couple recipes together and came up with this one.

First preheat the oven to 350 degrees. Grease your bundt pan and dust some flour into it. In a bowl wisk together 1/4 cup (half a stick) melted butter, 1/4 cup vegetable oil, 5-6 ounces of sour cream or plain yogurt, two eggs, 1 cup sugar, 1/4 cup brown sugar, 1 tablespoon vanilla, 1 tablespoon cinnamon, 1/4 teaspoon ginger together in a bowl.



My bananas were so ripe I didn't bother to mash them up. Next step would be to mash four large bananas and chop up one to two medium apples. Add both to your mixture and whisk together.


Add 2 cups flour, 1 1/2 teaspoon baking soda, and 1/2 teaspoon salt to the mixture and stir to combine. Try not to over mix your batter.


Pour the batter into your bundt pan. Tap the bottom of the bundt pan on the counter to get out any air bubbles. Smooth the top.


Bake the cake in a 350 degree oven for about 45-50 minutes. Check the cake after 40 minutes. Insert a toothpick and if it comes out clean then its done. If it comes out with some batter on it, leave it in a little longer. Cool 15 minutes before you turn the cake out of the pan. Make glaze while cake is cooling and pour on top after you turn the cake out of the pan.


To make the glaze, melt 1/4 cup (half of a stick) of butter in a saucepan. Add brown sugar and boil mixture for about two minutes. Remove from heat. Add 4 tablespoons of milk and stir together. Mixture will bubble, this is normal, so don't freak out. Add 1 tablespoon of vanilla. Mixture will bubble up some more. Add 1/4 tsp of cinnamon and stir again. Add powdered sugar a little bit at a time and stir. I used about a cup, but you might want to add more or less depending on how thick or thin you want your glaze to be. If you want to thin it out after you add the powdered sugar then you can add more milk 1 tablespoon at a time. When done pour over cake.


Let it melt down the sides of the cake. You can help it along if you want or if your glaze is thick.


My glaze was thicker and it was delisious. I was going to get some pictures of the cake after it was sliced but it was so good it went so fast!
